James, Head Chef at Quaglino’s in St James’s, is pleased to announce
the start of ‘Soufflé of the day’ on the à la carte menu, from March
2007.
The soufflé is a dish that was on the original Quaglino’s menu and
featured in “ The Complete Hostess” recipe book by Giovanni Quaglino,
who opened the eponymous restaurant in 1929. The restaurant proudly
retains the spirit and glamour of its illustrious past and Craig is
delighted to reintroduce some of the classic Quaglino’s cuisine to his
current menus.
Each day, customers will be able to choose from a different soufflé,
which will be either a savoury or dessert option. The individual
soufflés will be priced from £6.50-£11; there will also be the
opportunity to order sharing soufflés, priced at £11-£14.
Examples of dishes planned for the menu include:
- Roquefort soufflé, tomato jam
- ‘Soufflé Appetiser’ (Parmesan and crab) – from the original Quaglino’s menu
- Spinach and ricotta soufflé
- Raspberry soufflé, raspberry ripple ice cream
- Caramel soufflé, white chocolate and orange sorbet
- Chocolate and Grande Marnier soufflé, vanilla ice cream
- Amaretto soufflé, biscotti ice cream
