Infinity pool at Monte do CasalThere are many luxury hotels in the world, but few which will have had quite the same love and devotion lavished upon their development as Monte do Casal.

Once a country manor house, the hotel has been tastefully transformed by owner, Bill Hawkins, into one of the world's leading luxury boutique hotels.

"It's taken twenty years to develop Monte do Casal into what it is today," Mr Hawkins said. "and we aim to offer guests a truly holistic escape, combining luxury accommodation, exemplary service, glorious gardens and ultimate relaxation."

I think he's achieved his aim. 

Located on the outskirts of Estoi, a small traditional Portuguese village famed for its palace and nearby Roman ruins at Milreu, Monte do Casal is just 15 minutes drive from Faro town and the International Airport.

Bill Hawkins is justly proud of these, and hopes ultimately to have every native flowering tree, shrub and climber on display within them.  "There are more than 120 species of flowering tree in Portugal, and over 90 different climbers, which between them ensure a colourful display all year round," he said.

As a small country-house hotel, Monte do Casal is acclaimed not just for its accommodation, but also for its award-winning, Michelin recommended, restaurant.  Many visitors to the hotel come simply to enjoy the superb cuisine.  The lucky ones also get to stay the night.
